Christmas Cooking
Question:

I thought it might be nice to share our favourite recipes
I used to make my own fruit mince but haven't since having the ferels, I am going to do it this year seeing as we shall be home
STAR-TOPPED TARTS
tarts can be made 3 days ahead.
2 cups plain flour
2 tbsp ground almonds
175 grams butter
1/4 cup icing sugar
1 tspn grated lemon rind
1 egg yolk
1/4 cup milk,approx
2 cups (500g) fruit mince
1 egg beaten lightly
1 tbsp icing sugar
Lightly grease 2 tart trays. Sift flour into bowl, stir in almonds, rub in butter, then stir in sifted icing sugar and rind. Stir in yolk and enough milk to make ingredients cling together. Knead dough on a lightly floured surface until smooth, cover, refrigerate 30 mins.
Roll out pastry until 3mm tick. Cut out 24 bases using a 7.5 round cutter and 24 tops using a 4cm star cutter. Place bases in tray and fill with fruit mince, brush each star top with egg, place egg-side down on fruit mince. Bake in mod hot oven for about 20 mins, or until lightly browned.
Dust with sifted icing before serving.
FRUIT MINCE
fruit mince can be made a month ahead, stored in the fridge.
1 apple, peeled and cored
3/4 cup sultanas
1 cup raisins,chopped
3/4 cup mixed peel
1/3 cup red glace cherries, chopped
3/4 cup blanched almonds, chopped
3/4 cup currants
1 cup brown sugar, firmly packed
1 tspn grated lemon rind
2 tbspn lemon juice
1 tspn grated orange rind
1 tspn ground cinnamon
1 tspn ground mixed spice
1/2 tspn ground nutmeg
90g butter, melted
1/4 cup brandy or orange juice
Chop apple and half of the sultanas, place in a bowl with remaining sultanas and remaining ingredients; mix well.
Transfer mixture to sterilised jars. Keep in the refrigerator for at least 3 days before using.
Makes about 4 cups.

i think i told you all a week or so ago that i am doing caramel tarts mushroom tarts with my mum, gee i wish she could stand long enough to cook bake like she used to. i normally do all the salad type things the others do the pavlova, fresh fruit salad mum always does the triffle no matter how crook she feels my sis helps mum with the chritmas pudding now.
i loved it when i was a kid they always put sixpences in we would have to eat slow so we could find them not swolloe them, does anyone remember that? then along came bloody cent's they cant cook with that type of coin

.sorry.I dont do alot of that sort of cooking for Christmas, none of us like fruit mince, or tarts, I use to make white christmas but the kids arent' into it and it's too sweet.
last year our Christmas lunch was heap of salads and fruit, a huge ham and KFC.no point having stuff we wont eat (for days afterward!).so I went with what wouldn't get wasted.

Di my mum always makes trifle and the pudding every year. This year I think she is going out to lunch with my sister. We are staying home, in our own house so I am going all out this year. We haven't had a christmas at home since Sally was a baby.
