Question:
Anyone got any ideas or recipes here? I'm thinking maybe shortbread, white christmas, maybe rocky road, that kind of thing?
Those sound nice.
What about fudge.
Or special bread, like pumpkin, or banana or zucchini?
I saw these great cheescake pops. I am thinking about making them.
I used to always make batches of rocky road, put it into those little round take-away food containers, wrap in that colourful see-through plastic (forgot what it's called!) and give to family and friends at christmas time, or even easter. I'd wrap it like a bottle is wrapped with some ribbon, lovely.
Rocky Road
Ingredients
½ x 250g packet raspberry and vanilla marshmallows, chopped
½ x 250g packet Scotch Finger biscuits, coarsely chopped
100g unsalted macadamia nuts
¼ cup raisins, chopped
100g packet red glace cherries, halved
200g block milk chocolate, chopped
250g block dark chocolate, chopped
40g unsalted butter, chopped
¼ cup shredded coconut, toasted
Method
1 Grease a 13cm x 24cm loaf pan. Line the base and two long sides with baking paper.
2 Combine marshmallows, Scotch Finger biscuits, nuts and fruit in a large bowl.
3 Combine chocolates and butter in a medium heatproof bowl. Place bowl over a pan of simmering water and stir until mixture is melted. Stir in coconut, pour into marshmallow mixture and stir until well combined. Spoon mixture into prepared loaf pan, pressing down firmly. Refrigerate for at least 2 hours, or until set.
4 Serve the rocky road cut into small squares.
Hint: Rocky road can be made up to 1 week ahead. Store in an airtight container in the refrigerator.
White Chocolate Rocky Road
Ingredients
100g packet unsalted macadamia nuts
1/4 cup shredded coconut
125g Copha, chopped
3 x 240g blocks white eating chocolate, chopped
250g packet raspberry and vanilla marshmallows, halved
100g packet red glace cherries, quartered
100g packet Brazil nuts, halved
extra 1/4 cup shredded coconut
Method
1. Grease 8 holes of a 12-hole mini loaf pan (1/2 cup capacity). Line bases and two long sides with baking paper.
2. Combine macadamia nuts and coconut on an oven tray. Cook in a moderately slow oven (160C) for about 5 minutes or until golden brown.
3. Melt Copha in a small pan. Remove from heat and stand for 5 minutes. Pour Copha over chocolate in a large heatproof bowl. Stir until chocolate is melted and mixture is smooth. Cool.
4. Add macadamia mixture, marshmallows, cherries and Brazil nuts to chocolate mixture and mix well. Refrigerate mixture for 10 minutes to thicken slightly.
5. Spoon mixture into holes of prepared pan. Sprinkle tops with extra coconut. Refrigerate for at least 2 hours or until set.
6. To serve rocky road, stand at room temperature for 10 minutes. Using a serrated knife, cut rocky road into slices.
HINT. Rocky road can be made up to 5 day ahead, keep in an airtight container in the refrigerator.
Take any Rocky road recipe and put the finished product into greased cardboard cones.
when set, remove cardboard and you have Rocky Road Xmas trees.
Decorate with silver cachos (sp).
Wrap in clear cellophane and tie with ribbon.

I saw in one of the mags this week white chocolate crackle christmas trees. They looked nice, and something for the kids.
[FONT=Comic Sans MS][/font]Hi there, this year and every year, we, mostly Keziah this year. we make, Rum Balls, Apricot Balls, Cherry Ripe Slice, Rocky Road, and a weight watcher White Xmas.
Kez has put them in square take away dishes with xmas stickers on them and then put a lovely 2 strand bow on them, they are just lovely. We give them to the cleaning ladies, ironing lady and any friends.
